Dry and round: coriander and lemon up front, orris and angelica give silk in the middle.

Regulation (EU) 2019/787 sets out what may carry the name London Dry Gin, wherever it is made. Five rules we keep in every run:
- 01Only ethyl alcohol of agricultural origin, at most 5 g of methanol per hectolitre.
- 02Flavour comes only from distillation, with every botanical in the still.
- 03The distillate comes off at 70 per cent or more.
- 04After distillation only water is added. No colour, no flavouring.
- 05At most 0.1 g of sugar per litre. We add none.
